My Go-To Dinners

– Vegan Mac & Cheese –

Recipe from Vegan Yumminess. I added sautéed mushrooms, spinach, frozen peas and dill. Mix through pasta (I prefer buckwheat or spelt pasta).


– Sun-dried Tomato & Basil “Meat” Balls –

Recipe from Minimalist Baker. Serve on top of spiralized zucchini and a veggie pasta sauce sprinkled with pine nuts for a seriously filling and delicious meal!


– Raw Lasagne –

Layered vegetables, cashew cheese and sun-dried tomato broccoli pesto – super tasty, and this recipe beats many raw vegan lasagne’s I’ve had in restaurants around Melbourne.

– Chilli con “carne” –

Recipe from The Heathy Chef, substituting meat mince with a vegan mince (grab from the freezer isle of your local supermarket).


– Falafel lettuce cups with salsa –

Recipe for the falafels from Mind Body Green. Service with lettuce cups, and a salsa of fresh corn off the cob, capsicum, avocado, tomatoes and cucumber.
